KIM CHEE



1 large head Chinese cabbage
1 clove garlic
1 teaspoon grated ginger
1/2 teaspoon Accent (optional)
4 green onions with tops
2 tablespoons hot Korean red pepper
1 tablespoon sugar
2 tablespoons salted small dried shrimp

Wash, cut, sprinkle cabbage with 4 tablespoons salt. Let stand one hour. Wash three times in cold water. Add other ingredients. Put in jar. Pour in cup of water with a little salt and sugar. Cover and let stand for several days.
